Can the ledger hold crypto and fiat together?

Yes. Every asset, from euros to USDT on several chains, is a currency in the same ledger with its own precision, so trades, cards and transfers stay in one set of books.

How do you prove the balances are right?

A balance is always the sum of balanced entries, and a daily reconciliation compares the ledger with every bank, processor and blockchain the platform uses. Any difference goes to a queue in the backoffice.
